INGREDIENTS
FOR SUJI BALLS:
1 cup rava / suji / semolina,
3 tsp oil
1 chilli, finely chopped
1 inch ginger, finely chopped
2½ cup water
½ tsp salt
¼ cup coconut, grated (optional)
FOR TEMPERING:
3 tsp oil
1 tsp mustard
½ tsp cumin / jeera
½ tsp urad dal
½ tsp chana dal
5 cashew / kaju, halves
few curry leaves
1 dried red chilli
¼ tsp turmeric
¼ tsp kahmiri red chilli powder
¼ tsp salt
2 tbsp coriander, finely chopped
2 tsp lemon juice
INSTRUCTIONS
1. In a large kadai heat 3 tsp oil and saute 1 chilli and 1 inch ginger.
Pour in 2½ cup water.
2. Add ½ tsp salt and ¼ cup coconut. mix well.
3. Get the water to a rapid boil.
4. Keeping the flame on low start adding roasted rava slowly, stirring continuously.
cover and cook for 3 minutes or until the rava turns soft and fluffy.
5. Knead the dough for 5 minutes and prepare small balls.
6. Steam for 10 minutes.
7. In a large kadai heat 3 tsp oil and add tempering ingredients.
8. add ¼ tsp turmeric, ¼ tsp chilli powder and ¼ tsp salt.
9. Add steamed rava balls and mix gently.
10. Add 2 tbsp coriander and 2 tsp lemon juice. mix well.
Enjoy suji balls / rava balls with spicy chutney.

Kela and Paneer Balls( Navratri special)
Ingredients 200 gms paneer – grated 2 raw banana (kacha kela) 2 tsp green chilli paste 2 tsp ginger paste 1 tsp sendha salt 6 tsp singhare ka atta 4 tsp coarsely powdered peanuts 2 tbsp fresh coriander leaves oil for frying Method 1. Wash bananas with the peel. Microwave bananas along with the peel for 3 minutes. Alternately, boil the bananas in water. 2. Peel and mash well. 3. Mix all ingredients well and shape into small balls. 4. Deep fry in hot oil till golden brown. Serve hot with chutney.
