Pista (Pistachio) Cookies Ingredients: 1 cup all-purpose flour 1/2 cup unsalted pistachios, finely chopped 1/2 cup unsalted butter, at room temperature 1/2 cup granulated sugar 1/4 cup powdered sugar 1 large egg 1 teaspoon vanilla extract A pinch of salt Instructions: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper. In a medium bowl, combine the flour and chopped pistachios and set aside. In a separate mixing bowl, beat the butter, granulated sugar, and powdered sugar together until light and fluffy. Add the egg, vanilla extract, and salt and mix until well combined. Slowly add the flour mixture to the butter mixture, and mix until just combined. Roll the dough into small balls, about 1 inch in diameter. Place the dough balls on the prepared baking sheet, spacing them about 2 inches apart. Press the cookies down slightly with a fork to create a crisscross pattern. Ingredients for roasting the bread : 4 slices whole wheat bread 2 tsp butter 1/2 tsp chat masala for the chaat : 1/4 cup boiled potato chopped 1/4 cup onion finely chopped 1/4 cup tomato finely chopped 1 green chilli finely chopped 1/2 cup whisked curd 1/4 cup nylon sev 1 tbsp green chutney 1 tbsp tamarind chutney 1/4 tsp black salt Salt to taste 1/2 tsp roasted cumin powder 1/4 tsp red chilli powder 1/2 tsp chat masala Instructions roasting the bread: Collect all the required ingredients. Take a bread slice and cut into small cubes using a pizza cutter. Heat 2 tsp butter or ghee, and 1/2 tsp chat masala. Then add the bread cubes. Roast them for 3-4 minutes on low flame or until light brown and crispy. Once done, remove the pan from flame. making bread chaat: Transfer these toasted bread cubes into a bowl. INGREDIENTS FOR PRESSURE COOKING: 2 potato, peel & cube 1 carrot, peel & chop 5 beans, chopped 3 tbsp sweet corn 2 tbsp peas / matar 6 florets gobi / cauliflower ½ tsp salt OTHER INGREDIENTS: ¼ cup corn flour ¾ tsp kashmiri red chilli powder ½ tsp garam masala ¼ tsp cumin powder / jeera powder ½ tsp aamchur / dry mango powder ½ tsp ginger garlic paste 2 tbsp mint / pudina, finely chopped 2 tbsp coriander, finely chopped 1 tsp kasuri methi ¼ tsp salt 2 tbsp bread crumbs oil for roasting INSTRUCTIONS 1. take the cooked vegetables in a large mixing bowl and mash smooth. 2. add in ¼ cup corn flour. 3. Add spices, ½ tsp ginger garlic paste, 2 tbsp mint, 2 tbsp coriander, 1 tsp kasuri methi and ¼ tsp salt. 4. mix well making sure all the spices are combined well. 5.
